The vistas of Vermont were dotted with Grist Mills: water-powered mills that were powered by swift rivers. A water wheel would be turned by the powerful force of flowing water, which rotated heavy stones and in-turned ground corn into cornmeal or wheat into flour. A grist mill was like a living thing, a rhythmically-beating heart: the town center, foundry, sawmill, and post office. Like this classic structure, the bakery will be the center of the village experience, providing treats to all both guest and venues.

The interiors will be warm and have a modern interpretation of these hearty, honest structures and the graining process, where the foundation of any great baked good comes from. Visitor will flock to the village’s new heart to grab a warm croissant and crafted coffee on their way to slopes.

Food & Beverage Concept Development

Expansive plaza-facing windows will showcase the fascinat ing—somet imes mesmeri z ing—t radi t ional techniques of this European-style bakery, which will be capable of operating at large-scale, producing the baked goods for all food and beverage spaces in the village. The storefront itself will sell individual baked goods, prepared sandwiches, salads, and beverages.
